Friday's Frugal Food

My friend Melissa shared a frugal recipe with me recently and I wanted to share it with all of you.  It sounds quite yummy and I am looking forward to trying it!  Thanks so much Melissa!

1 c chopped onion and some garlic (opt)
1 t oil
1 c dried lentils, rinsed
1 T chili powder
2 t ground cumin
1 t oregano
2 1/2 c chicken broth
1 c salsa
taco shells, lettuce, cheese, sour cream, etc.

In large skillet, saute onion and garlic in oil until tender.  Add lentils, and seasonings; cook and stir for 1 minute.  Add broth; bring to a boil.  Reduce heat; cover and simmer for 25-30 minutes or until lentils are tender.  Uncover and cook for another 5 minutes or until mixture is thickened.  Mash lentils lightly.  Stir in salsa.  Spoon lentil mixture into taco shell and top with favorite toppings.  

Enjoy!  My family loves these and its cheaper and healthier than hamburger.


  1. Yum! I'm definitely going to try this one! I might have to throw a little tiny bit of meat into it to make my hubby happy, but I would definitely eat it as is!
